According to the latest research, these five foods are extremely high in vitamins and are some of the best “cancer-fighting foods.”
Quinoa contains essential amino acids, is very high in protein and fiber, and has plenty more nutritional benefits.
Kale is high in iron and antioxidants and best of all ZERO FAT!!
Tomatoes are high in vitamin C and A.
Olive oil contains oleic acid that may weaken some breast cancer genes.
Turmeric acts as an anti-inflammatory.
Recently, after reading a few articles on the latest research into health foods, I decided to create a recipe that combines all five of these nutritious foods into one delicious, wholesome meal.
This is one of my favorite vegetarian recipes, as it keeps me full for a long period of time and I need that to get through a long and busy day.
Give this a try…
Here is what you need to start:
½ teaspoon sea salt
1/8 tsp Turmeric powder
Kale – one bunch chopped fine
2 tomatoes chopped diced
1 tbs sea salt
3 tbs extra virgin olive oil
2 sweet onions sliced thin
Bring 2 cups of water to boil in a small cooking pot, add one cup of Quinoa, sea salt and Turmeric powder.
Cook for 15 minutes or until Quinoa is fully cooked and water is dried out.
Spread and cool on large dish.
In separate frying pan, add diced tomatoes and Kale to 1 tbs of extra virgin olive oil and cook on medium heat for 15-20 minutes.
Add 1 tsp of sea salt.
Once cooked, place Kale and tomatoes on top of Quinoa.
Next, fry sweet onions in 2 tbs of extra virgin olive oil until fried to a golden dark color (caramelized).
Once cooked, place on top of Quinoa and Kale and serve.
In photo, beets, olives and pecans are used for decor and are also nutritious side additions to the meal.
