Red Lentil Soup for the Busy Soul!

I always store a bag of small red lentils in my pantry for a rainy day.

Rainy day means I had a busy day, I’m tired, and don’t feel like having takeout.

This soup will only take about 20 minutes to prepare!! It is extremely high in nutrients such as fiber, iron and antioxidants. It is very wholesome and tastes fantastic!!

 

Here is all you will need:

2 cups of dried small red lentils (red lentils are very high in fiber and iron)

1 cup or handful of fresh green organic spinach (get those greens in there)

1 tbs extra virgin olive oil or coconut oil

1 tbs of sea salt or pink Himalayan salt

¼ tsp of ground turmeric (I try to stick this spice in as many recipes as I can as its health benefits are extremely high)

1 small onion

Soak 2 cups of small red lentils overnight or morning or even shortly before cooking.

Rinse in cold water and drain.

Add the lentils to 10 cups of boiling water in a soup pot and begin cooking on medium-high heat.

Dice the small onion and place in a separate frying pan.

Add 1 tbs of olive oil to diced onions and cook until light brown in color.

Add cooked onions, spinach, salt and turmeric to boiling lentils and cook for 20-25 minutes on medium/high heat until texture becomes thick.

 

Serve with croutons or crackers and enjoy!!
